Procol® is a registered trademark of highly purified edible Guar Gum for the food industry. The Procol® brands of Guar Gums are non-ionic polysaccharide water soluble polymers of mannose and galactose sugars. Procol® Guar Gums act as stabilizers, thickeners and suspending agents in food products. They perform functions normally requiring much larger percentages of starch or other thickening agents.
Being a natural and versatile hydrocolloid, soluble in hot and cold water with a good pH tolerance, Procol® Guar Gum is extensively used in the food industry. It also effectively hydrates in sugar and brine solutions.
